Number of Servings: 8

Ingredients

    Cherry Pie
    3 cups frozen sour cherries, thaw and save 3/4 cup of the juice
    Add 1/2 cup sugar
    3 tsp Sweet & Low sugar substitute
    3 Tble quick-cooking tapioca
    10 drops red food coloring
    3 to 4 drops almond extract (optional)
    dash salt (optional)

    Combine all ingredients into bowl and let sit for 20 minutes. Meanwhile, make the crust.

    Crust
    1 cup sifted all purpose flour
    3.4 cup unprocessed wheat bran
    3 Tbls ground flax seed
    1/2 tsp salt
    scant 1/2 cup shortening
    5 to 7 Tbls water

    mix dry ingredients together; cut in shortening with pastry blender until pieces are size of small peas. Sprinkle 1 Tbls water over mixture, gently toss with fork. Repeat until all is moistened enough to roll out
    Roll half the dougn between two floured sheets of wax paper. fit to 10" pie plate. Roll remaining dough for the top, or can be cut for a lattice top.

    Fill pie with cherry mixture, dot with 1 Tbls butter. Adjust top or make lattice top. Crimp edge high. Cover edges with foil. Bake in 400 degree oven for 55 minutes. (Remove foil during last 10 minutes.) Let rest for 30 minutes.
