Ingredients

Red quinoa 1/4 cup dry
Fresh spinach 2 cups
Almonds, sliced and toasted 1/3 cup
Feta cheese, crumbled 1/2 cup
Red onion, thinly sliced
Dried cranberries, pomegranate infused 1/3 cup
Vinaigrette:
Olive oil, 2 Tbsp
Red wine vinegar, 2 Tbsp
Dijon mustard, 1/2 tsp
Honey, 2 tsp
Tips
You can use black quinoa if you can find it.
Directions
Cook the quinoa and allow to cool. Fluff with a fork
While quinoa is cooling:
In a small bowl whisk together the olive oil, vinegar, Dijon and honey. Set aside.
Put the spinach in 2 salad bowls
Add the quinoa, toasted almonds, feta and cranberries
Serve salad with vinaigrette on the side
