Ingredients

    Chicken Thigh, 6 thigh, bone and skin removed
    Canned Tomatoes, 2 can
    Eggplant, fresh, 1 eggplant, unpeeled
    Zucchini, 2 cup, sliced
    Thyme, fresh, 2 tsp
    Salt, 1 dash
    Pepper, black, 1 dash
    *Lemon Juice, 1 lemon yields
    Red Wine, 1 glass (optional but really adds to the flavour)
    Green Peppers (bell peppers), 1 cup, strips

Tips

I serve with Greek Lemon potatoes (potatoes roasted with whole garlic, lemon juice and salt). Dish will take just about any veges.


Directions

place all ingredients in slow cooker, turn cooker on :) cook for 4 to 6 hrs depending on your cookier. Can also be done in the oven.
