A vegetarian alternative to a meat burger. A vegetarian alternative to a meat burger.

    Basil yogurt spread:

    Put the Low-fat Greek yogurt, Dijon mustard, basil leaves, garlic and sea-salt and black pepper in a bowl and mix until well blended.
    1/2 cup low-fat Greek yogurt
    1 Tbsp (15 ml) Dijon mustard
    1 handful basil leaves
    1 clove garlic
    1/4 tsp (1/25 ml) each sea salt and black pepper
    4 large portobello mushrooms
    4 whole-grain sandwich bun/rolls
    2 cups (480 ml) spinach
    2 tomatoes, thinly sliced


Heat a grill or grill pan (I use a George Foreman grill) with cooking spray. Rub the mushroom with the olive oil and season with salt and pepper. Cook on each side for approx.5 minutes.

Spread both sides of the whole wheat bun with the Basil Yogurt Spread and add spinach, portobello mushroom and tomato slices.
