Introduction

This is my go-to recipe that I make just about every time I have leftover chicken. I love the fact that it is loaded with toppings and I can eat the whole thing! And it satisfies either a pizza craving or a buffalo wing craving. This is my go-to recipe that I make just about every time I have leftover chicken. Ingredients

    1 Whole Wheat, High Fiber, Low Carb Tortilla
    Cooking spray
    2 Laughing Cow Light Blue Cheese wedges
    3 ounces chopped cooked chicken breast
    1 tsp Frank's hot sauce (or any other zero calorie hot sauce)
    ½ cup petite carrots, raw
    ½ cup celery, raw

Tips

I used to prepare this recipe by spreading the tortilla with a mixture of plain greek yogurt and dry ranch seasoning (you can see it in the picture), but I now leave it out because I found that I couldn't really taste it. For people who like ranch better than blue cheese, this might be a better option.


Directions

Lightly spray tortilla with cooking spray and bake in 375 degree oven for about 5 minutes, until it begins to crisp.

Microwave cheese wedges in bowl for about 20 seconds. Stir in chicken and hot sauce until chicken is well coated.

Dice carrots and celery and mix together.

Remove tortilla from oven, flip over. Top with half the carrot and celery mixture.

Top with chicken mixture.

Top with remaining carrot and celery. Drizzle a little more hot sauce to taste.

Bake at 375 for about 8 minutes, until outer edge is browned. Carefully remove onto cutting board and slice into six pieces.

Serving Size: Makes 1 generous serving!

    Incredible!
    Just made this for lunch today and can't believe how good it was! I was doubtful at first about celery and carrots on a pizza, but with the chicken, blue cheese and hot sauce, it really works. Thanks for sharing it. - 5/1/12
