1 1/4 C Whole Wheat Flour
2 Tbsp Canola Oil
4-5 Tbsp Water, cold
1 C Half-and-half
1 C 1% Milk
3 Tbsp Corn Starch
1 1/3 C Peanut Butter, smooth
8 oz Cream Cheese
Directions
Crust:
Preheat oven to 350ยบ F. In a small bowl combine flour and oil with fork until it looks like small peas. Add water and mix until homogenous. Rest for 5 minutes, then press into the bottom of a 10" springform pan or 9" pie pan. Pierce the dough in several places with a fork and bake 15 minutes, or until blonde.
Filling:
In a medium sauce pan combine milk, half-and-half, corn starch, and Splenda. Heat on medium until mixture begins to simmer and thicken. When it is the consistency of pudding (quite thick) remove from heat and allow to cool for 5 minutes.
Meanwhile, combine peanut butter and cream cheese in a mixing bowl and mix until smooth. When milk mixture has cooled add it to peanut butter mixture and mix on low, scraping the bowl frequently, until very well combined.
Pour peanut butter mousse into prepared pie crust. Decorate with calorie-free chocolate sauce if desired.
