Number of Servings: 18

Ingredients

    5 cups cooked brown rice
    2--15oz cans of black beans, drained and rinsed
    1 bunch of cilantro, rinsed and stem removed
    1/4 cup olive oil
    1 chipotle pepper in adobo
    2 vine ripened tomatoes, small dice
    1 lg onion, diced



Directions

cook the rice and let cool. drain and rinse black beans and allow to drain. rinse cilantro and allow to dry. put the pepper, olive oil, and cilantro into a chopper and blend until pesto-like consistancy. chop onion and tomatoes. Mix all ingredients together and store in an air-tight container in the frisge.

Serving Size: makes 18--1/2 cup servings
