Ingredients

    1/3 cup yogurt low fat
    2 Tbs fresh dill, chopped
    1 Tbs fresh parsley, chopped
    2 1/2 Tbs lemon juice
    1 1/2 Tbs olive or grape seed oil
    1 1/2 fresh mint, chopped
    2 1/2 tsp brown mustard
    1/4 tsp sugar
    1/4 tsp salt
    1/4 tsp black pepper
    1 clove garlic, minced
    2 large cucumbers, thinly sliced lengthwise like ribbons
    1 fennel bulb thinly sliced
    1 small red onion, cut in half, thinly sliced


Tips

Nice touch to garnish with fennel fronds if in cheerful condition. They are edible and good in the salad as well.


Directions

In a food processor, process together yogurt, dill, parsley, lemon juice, oil, mint, mustard, sugar, salt, pepper, and garlic (first 11 ingredients) until well blended.
In large bowl, combine cucumber, fennel, and onion.
Add yogurt dressing and toss to coat well.
