Introduction

I've heard thighs work better than breasts on the chicken, so I bake the breasts, debone and skin them. The calorie calculator doesn't have skinless thighs, so it's calculated with breasts, which probably adds a few calories to the total, but not much. Ingredients

    Lentils, 1 cup
    Jyoti Natural Foods classic masala sauce, 1 cup
    Cabbage, fresh, half a head, large (about 7" dia)
    Zucchini, baby, 1 large
    Tomato products, Hunts Diced Tomatoes w/ Basil, Garlic, and Oregano, 1 can
    3 chicken thighs, de-boned and skinned

Directions

Cook chicken thighs in oven at 400 degrees for 20 minutes. Meanwhile, Cook lentils according to package. Add tomatoes when halfway through, finish cooking lentils. Skin and debone chicken. Add the remainder of ingredients, including thighs, to the pot of lentils and simmer 10 minutes.
