Ingredients

100g (less than 1 cup) all-purpose flour
66g water
sprinkle of yeast (1/8 to 1/4tsp)
1 tsp salt
Directions
1. mix flour and water in a bowl; set aside 20-30 minutes
2. sprinkle on salt and yeast
3. mix with dough hooks ~6-7 minutes (or stir by hand until blended, then knead ~80 minutes)
4. cover and let rise 1-2 hours, or until at least 50% larger
5. roll out on a lightly floured surface or toss as you would a larger ball of dough

a. heat oven to 450F or hotter, if your oven can handle it.
b. bake dough with layer of olive oil first for ~10 minutes, then remove dough from oven, layer as you wish with pizza ingredients, and bake ~10 minutes more. You can cut the baking time by using a hotter oven.
Serving Size: Makes ~10" round pizza; 4 slices
