Ingredients

    30ml oil
    125g mushrooms, roughly chopped
    200g baby spinach
    4 large eggs

Tips

If you wish to speed things up, poach your eggs and just pop them in the hollows instead of cooking them in the oven.


Directions

Preheat oven to 200 degrees C and butter two small shallow dishes. Heat oil in a large frying pan or wok and stir-fry the mushrooms for a couple of minutes. Add the spinach and stir-fry until it just begins to wilt. Divide between two shallow, prepared oven proof dishes. Make 2 slight hollows in the spinach mixture and crack an egg into each hollow. Bake for about 12 minutes or until the eggs are just set. Season with your favourite herbs and serve immediately with salads of your choice.
