Ingredients

    2 tbsp extra virgin olive oil
    1 lb ground turkey
    13 oz turkey smoked sausage, cut into chunks
    2 cans white beans, drained
    1 can pinto beans, drained
    1 cup chicken stock
    1 (6 oz) can tomato paste
    1/4 cup ketchup
    1/2 cup onions, diced
    1/2 cup celery, diced
    1/2 cup carrots, diced
    2 roma tomatoes, diced
    1 1/2 cup spinach, frozen
    Salt and pepper to taste
    1 tbsp Chili powder
    Dash of onion powder, garlic powder, ground ginger, cayenne, paprika, thyme

Directions

Heat the oil and saute the ground turkey. Add the carrots, celery and onion and cook until tender. Add all remaining ingredients (except tomatoes and spinach) and simmer for about 30 minutes. Stir in tomatoes and spinach and let simmer another 10 minutes.
