Introduction

Ingredients

1 Cup Oatmeal
1 Cup Whole Wheat Flour
1/2 Cup All-Purpose Flour
1/2 tsp Salt
1 tsp Baking Soda
1 tsp Pumpkin Pie Spice
1 tsp Cinnamon
2 Eggs
1/2 Cup Raisins
1 Cup Sugar
1 Can Pumpkin - 15 oz
1/4 cup Peanut Oil
Directions
Mix dry ingedients - oatmeal, flours, salt, baking soda, spices, cinnamon. Set Aside.
Mix 2 eggs, sugar, pumpkin, oil and raisins, mix until well blended. Stir in dry ingredients until incorporated.
I used a small scoop and made about 42 cookies.
Bake on lightly greased (I used parchment paper ungreased), 350 for 10-12 minutes or until golden.
You can also frost these for a more decadent treat. I use a buttercream or cream cheese frosting.
