Introduction

Ingredients

2 lbs lean ground turkey
2 eggs
3/4 cup oatmeal
1/2 cup nonfat milk
1/2 cup onions
1 tbsp dried thyme
1tbsp olive oil
1 tsp salt
1 tsp pepper
2 cups prepared stove top stuffing
3 tbsp parmesan cheese (optional)
Directions
Preheat oven to 350 degrees.
Mix together turkey, eggs, oatmeal, milk, onions, thyme, olive oil, salt and pepper.
Take half of the meat mixture and fill the bottom of a 9x13 greased casserole dish (do not let the mixture touch the sides of the dish. Place prepared stuffing into the middle of the meat. Take the remaining meat mixture and top the stuffing. With your hands seal the bottom mixture with the top, creating a stuffing encased loaf. Top with parmesan cheese.
Bake for 1 hour. Makes 10 servings.
