Ingredients

2/3 cup Brown Rice (I used Minute Rice)
4 medium Green Bell Peppers
1 lb Ground Turkey
1/3 cup celery, chopped
2 Tb onion, chopped
1/2 t Salt
Dash Pepper
1/4 cup Ketchup
1 medium tomato, chopped
1 (8 oz) tomato sauce
1 t Sugar
1/4 t dried basil leaves
1/4 cup Cheddar Cheese, Reduced Fat, shredded
Directions
Cook rice according to directions.
Preheat oven to 350.
Cut off tops of peppers and remove seeds and membranes. Place in large saucepan and cover with water. Bring to a boil. Boil for 5 minutes. Drain. Set aside.
In large skillet, brown meat, celery and onions. Drain. Add cooked rice, salt, pepper, ketchup and tomato. Mix well. Spoon mixture into prepared peppers and place filled peppers in ungreased shallow baking pan.
In small bowl, combine tomato sauce, sugar and basil. Mix well. Spoon half of mixture over peppers.
Bake at 350 for 30. Spoon remaining sauce over peppers and sprinkle cheese on top. Bake another 5 minutes.
