Ingredients

    1 TBSP Olive Oil
    1 Cup Long Grain Brown Rice
    2 Cups Beef Broth
    1 Cup Tomato Sauce
    1 Cup Chopped Onion
    1 Red Bell Pepper Chopped
    2 tsp Chili Powder
    1 tsp Cumin
    1/2 tsp Garlic Powder
    1/2 tsp Kosher Salt

Directions

Heat oil in skillet over Med heat. Add onion, bell pepper, and rice. Sautee for about 5 minuted or until veggies are tender and rice is toasted. Add beef broth, tomato sauce, chili powder, cumin, garlic powder and salt. Bring to a boil. Once rice is boiling, cover with a tight lid and cook about 45 minutes or until rice is done.

    I used a rice cooker after cooking the veggies on the stove. It worked out well, except that I needed more liquid, about 1 cup worth. Much better than a store bought package. - 3/6/10
