Ingredients

1/2 cup uncooked quinoa
1/4 cup dried cranberries
1/4 cup scallion (salad onion) finely sliced
60g (aprox 1/2cup) cooked chicken or turkey
For the dressing:
Juice of 1/4 lemon
1-2 Tbsp olive oil
salt & pepper to taste
other seasoning if desired (dried thyme, garlic Italian seasoning, etc)
Directions
Makes 2 lunch-sized servings. Eat hot the first day, cold the second!
1. Cook the quinoa according to pack directions (usually 10 minutes in boiling salted water).
2. When quinoa has absorbed at least 1/2 the water, switch off heat, add dried cranberries, cover & let sit for 5 minutes.
3. Add scallion and diced cooked chicken, then put back onto heat until chicken is piping hot.
4. Drizzle a few teaspoons of the dressing, taste, then add dressing or salt/pepper to taste.
