Ingredients

3c Eggbeaters
1c Green/Red/Yellow Bell Peppers (chopped)
OR
3c Southwestern style Eggbeaters
2 Jimmy Dean turkey sausage patties (minced)
1c 2% Shredded Cheese of your choice
12 strips Low Sodium Turkey Bacon
2 tbsp Ground Flax Seed (meal)
Cooking spray
Directions
Pre-heat oven to 400
Spray muffin pan with cooking spray
Line each cup with turkey bacon (cut each strip to fit)
Chop peppers
Cook & Mince sausage
Mix/whisk all remaining ingredients (if you add any spices to taste DO NOT ADD SALT... trust me it doesn't need it)
Fill each cup with mixture (should be approx 1/2 - 3/4 full)
Bake for approx 15 -25 minutes (until eggs look the color you like 'em to be)
Serving Size: Makes 12 muffins
