Ingredients

    1 medium eggplant
    1 zucchini
    1 medium onion
    olive oil
    salt, to taste
    black pepper, to taste

Directions

cube all vegetables. Put in pan or on lined baking sheet. drizzle with olive oil and sprinkle with salt and pepper to taste. Bake at 400 F for 30 min or until vegetables are soft on the inside and starting to brown on the outside.
