Ingredients

    4 bunchs of collard greens, fresh (wash and cut thinly)
    2 roma tomatoes
    1/4 onion (chopped)
    1 tbsp EVOO
    1 tsp Beef Bouillon paste
    1/4 tsp garlic powder

Tips

I grew up on southern cooking and greens were usually made with smoke ham hocks or smoked turkey to add flavor. This is a healthy version incorporating Kenyan style greens (sukumi wiki) and southern style. I don't miss the fat or calories. :-)


Directions

Wash well and cut up collards, thinly sliced. (to do this roll leaves like a cigar and slice thinly). Using a stock pot add EVOO and onions, fry until translucent. Add chopped tomatoes and cook for additonal 4 mins. Add chopped collard, (2 handfuls at a time and allow them to wither a little incorporating them into the tomato and onion). Add 3 cups of water and seasonings. Cook until tender and water evaporates. May require 1 more cup of water it greens are not tender before water has evaporated.

Serving Size: should yield 10, 1/2 cup servings...
