Ingredients
-
4-6 chicken tenderloins, sliced into thin chunks
1 can of pineapple chunks, juice reserved
1/2 c of brown sugar
1 T of chili sauce
3 T of rice vinegar
brocoli
1 med onion, sliced thin
1 pepper sliced thin
1 1/2 c of sugar snap peas
Directions
Saute chicken chunks, onions, and peppers until cooked thoroughly. As you cook this, make the sauce by combing reserved pineapple juice, rice vinegar, chili sauce, and brown sugar in a bowl. Wisk until sugar is dissolved. Adjust measurements if you want more/less sweet, sour, or spicy.
Once chicken is cooked, add pineapple, brocoli, sugar snap peas, and sauce. Cover with a lid so the brocoli and peas may steam. Serve over a bed of rice.
