Introduction

Ingredients

    1-2 Chicken Breasts (diced, cooked, and seasoned to desire)
    3c. Water
    2c. Low Sodium Chicken Broth
    2 tbsp. Chili Powder
    2c. Yellow Corn (or two cans, no salt added)
    1c. Salsa
    Tortilla Chips
    Cheddar Cheese

Tips

I cook my chicken with garlic, chili powder, cumin, salt and pepper. You can also use canned or pre-cooked chicken. You can also substitute chicken bouillon for the chicken broth and add more water, but that will increase the overall sodium in the recipe.


Directions

Dice and cook chicken breasts with desired seasoning

In a large pot combine water, chicken, chili powder, and chicken broth. Bring to a boil, then reduce heat, cover and let simmer 8 minutes. Add corn and bring to a boil again. Let simmer, uncovered, for five minutes. Add salsa, and serve. Garnish with Tortilla Chips and Shredded Cheddar Cheese if desired.
