Ingredients

- 7c. peeled, cubed, white potatoes (about 8 potatoes)
- 1 lb boneless skinless chicken breast (approximately 3 breasts)
- 1 onion, chopped
- 2 c. Sargento reduced fat 4 cheese italian shredded cheese
- 2 c. Sargento reduced fat cheddar jack shredded cheese
-4 c. frozen broccoli
- 2 c skim milk
- .5 c flour
- .25 c light butter
-Salt and pepper to taste
-Parsley
Directions
-Peel and cube the potatoes. Cut the chicken into 3 pieces each for faster cooking time. Boil the chicken and potatoes in a large pot until chicken is cooked through and potatoes are tender.
- Drain the potatoes. Shred the chicken.
- In a saucepan, melt the butter. Slowly add the flour. Stir until it forms a paste. Slowly add the milk, stirring constantly. Once it thickens, reduce the heat. Add salt and pepper. Slowly add the cheese. Stir constantly until the cheese is melted. This will be very thick.
-Grease the 9 x 13 x 2 casserole dish with cooking spray. Layer the potatoes, broccoli, onion, and chicken. Spread the cheese mixture on top. Sprinkle some parsley on top. The dish will be very full.
-Bake at 350 degrees for 40 minutes, or until the cheese starts to brown.
