Introduction

I threw this together on a hot day when I wanted something crispy and refreshing. You could do any number of variations, like adding cucumber or carrot, or using fresh basil instead of mint. Ingredients

    3 red radishes (about 1 oz), thinly sliced
    1/4 med. jicama (about 4 oz), peeled & julienned
    1 tsp. honey
    juice of 1/2 lime
    1 tsp fresh mint leaves, finely chopped

Directions

Toss ingredients together in a bowl and refrigerate for 30 minutes until chilled. Serve alone or on top of a bed of greens.
