Ingredients

    1 serving Designer Whey Protein Powder- French Vanilla,
    4 large egg white, fresh,
    1/2 cup dry Old Fashioned Quaker Oatmeal- Plain (ground into a flour)
    .25 cup Pumpkin, canned, without salt,
    1 tsp Pumpkin Pie spice,
    5 drops liquid stevia
    1 tsp Vanilla Extract,

    1 tsp Vanilla Extract,
    8 oz Fage - 0%,
    3 drops liquid stevia (add to taste)

Tips

These aren't necessarily fluffy or super flavorful, but for a high-protein breakfast, they do the trick. I didn't prefer the yogurt on top, but as a side. Instead I used 1 Tbls peanut butter as a topping for the pancakes which is not included in the nutrition info.


Directions

Mix all ingredients except the last 3, pour batter onto hot skillet, flip when holes show on top.

Mix last 3 ingredients as a topping, or side dish.

Serving Size: makes 8 small pancakes (about 4")
