Ingredients

2 large chicken breast, bone-in, skin removed
water, enough to cover chicken
1 med red bell pepper
1 med yellow bell pepper
1 med orange bell pepper
1 cup chopped onion (I prefer using green onions)
4 ounces ronzoni smart taste penne pasta
Mrs Dash soutwest chipotle seasoning
Weber Kickin Chicken seasoning
Non-stick cooking spray
Directions
1. Boil chicken in water seasoned with both seasonings (I don't measure, just use your tasteas a guide) until done. Remove chicken and reserve broth. Tear chicken in small pieces when cool enough to handle.
2. Halve peppers and slice into thin strips.
3. Spray skillet and add peppers & onions
4. Saute for 5 minutes. Add 1 cup of reserved broth & 12 ounces of chicken (save rest of chicken for later use)
5. Cook 4 ounces of pasta in remaining broth that has been returned to a boil. Cook 11 minutes. Drain & add to peppers and chicken.
6. Mix welll. Serve with 2 teaspoons of parmesan cheese if desired.
Serving Size: Makes 4 2-cup seasoning
