Ingredients

    1 Medium Avocado
    60g Cucumber
    2 Cloves Garlic
    25ml Lemon Juice
    1tsp Cumin
    1/2 tsp Coriander
    1 tsp Olive Oil
    45g Low Fat Cream / Soft Cheese
    2 pinches Black Pepper
    2 pinches Salt

Tips

Instead of / in addition to the cucumber you can add 60g of fresh garden peas, this adds a little more sweetness to the dip, and it's what Old El Paso uses!

If you have time to leave the dip in the fridge for an hour or two the flavour will be enhanced.


Directions

Peel the avocado and cucumber. Crush the garlic and chop the vegetables as finely as you can and put into a blender with the oil and lemon juice. Blitz well, until there's no lumps. Add the remainder of the ingredients. I've added only a little bit of salt and pepper but you can add to taste. Make sure you account for the extra salt on your tracker.
