Ingredients

    Granola
    1 1/2 cups coconut flakes, (unsweetened if available)
    6 cups old fashion or steel cut oatmeal
    2 cups coarsely chopped pecans
    2 cups dried cranberries / cherries or combo
    1/4 cup butter melted
    5 Tbsp brown sugar or 2 1/2 Tbsp splenda brown sugar
    1/4 c honey

Directions

Preheat oven 350° F.*
In large baking pan spread coconut out evenly, then bake for about 12-15 minutes using large spatula turn over every 4-5 minutes until evenly browned, be careful as it coconut burns quickly.
In very large skillet over medium heat melt butter, add pecans, brown sugar and honey together till the sugar is dissolved and mixture begins to bubble, Reduce heat to low, gradually add oatmeal stirring to thoroughly coat after each addition, continue to brown stirring constantly until oatmeal begins to lightly brown. Then place in foil lined large baking pan with sides, bake at 300°F for about 30 -45 minutes, again using large spatula, turn every few minutes to evenly browned. Remove from oven add dried fruit and toasted coconut, toss, then allow to cool before storing in airtight container.
