Ingredients

    3 C. Chopped Fresh Apricot
    1 C. Shallots, Julienned
    1/2 C. Chopped Green Bell Pepper
    1/2 C. Chopped Red Bell Pepper
    1/2 C. Chopped Fresh Pineapple
    1/4 C. Chopped Cherry Tomatoes
    1 Habanero Pepper, Seeded & Minced
    2 Cloves Garlic, Minced
    1 tsp. Minced Fresh Cilantro
    1/2 tsp. Cumin
    1/4 C. Fresh Lime Juice

Tips

Use rubber gloves to seed & mince the habanero pepper, & don't touch your eyes or skin with the juice.


Directions

Mix the apricots, shallots, green bell pepper, red bell pepper, pineapple, cherry tomatoes, habanero pepper, garlic, cilantro, cumin, & lime juice together in a bowl; refrigerate at least 2 hrs before serving.
