Ingredients

    4 frozen boneless skinless chicken breasts
    1 large onion chopped (I prefer yellow)
    I can low fat Cream of Mushroom soup
    3/4 cup plain Greek yogurt
    2 cups white rice
    2 cups water
    2 cups chicken stock
    1/2 cup white cooking wine
    1 cup frozen mixed vegetables
    Salt and Pepper to taste
    1 tbs. Italian seasoning

Tips

If using quick-cooking white rice, do not add water or rice until one hour before serving.


Directions

Place frozen chicken breasts on the bottom of the crock pot. Season well. Continue with all the other ingredients. Cook on low setting for 4-6 hours.
