Ingredients

16 oz box pasta (I used penne rigata bc it's easier for the kids to eat)
2 lb shrimp
4 T olive oil
4 cloves garlic, minced
1/2 onion, diced finely
1 28-oz can crushed tomatoes
1 tsp Italian seasoning
1-2 tsp crushed red pepper (depending on heat preference-or omit it)
1 c hot water
2 T capers
2 T chiffonade of basil
Directions
In large skillet, heat 2 T olive oil. Add 2 cloves garlic & saute until fragrant (approx 30 seconds). Saute shrimp until halfway cooked. Remove shrimp and garlic, set aside.
Begin cooking pasta according to package directions.
In skillet, add the remaining 2 T olive oil and heat. Saute onions until beginning to caramelize, stir in remaining 2 cloves garlic and saute until fragrant. Add Italian seasoning & crushed red pepper then add crushed tomatoes & hot water. Simmer partially covered for 15 min.
Drain pasta & add to skillet. Stir in capers and basil.
Add shrimp back into skillet & cook until shrimp are done.
Salt & pepper to taste then serve with grated parmesan.
