Ingredients

    4 lean pork chops
    1 can black beans, drained
    1 can whole kernal corn, drained
    1 cup chopped peppers (red, yellow, green, or mixed)
    2 tablespoons taco or cajun seasoning
    1 tablespoon olive oil
    1 cup chopped onion
    2 tablespoons barbeque sauce

Directions

Rub one tablespoon of seasoning over each side of the chops. Brown on both sides in the olive oil. Add the peppers and onions. Cover and cook until peppers and onions are tender. Add the drained vegetables and mix together. Heat through until added vegetables are hot. Sprinkle with second tablespoon of seasoning and drizzle with barbeque sauce. One chop per serving with 1/2 to 3/4 cup of vegetables. Goes well with brown rice.
