Ingredients
-
10 oz thawed and de-veined shrimp, raw, any size
1/4 tsp salt
3/4 tsp sugar
1/2 package (aprox 6 oz) Mann's Broccoli Slaw, or equivalent
6 cloves of garlic
3 cups of cooked whole wheat spaghetti
3 tbs olive oil
Directions
1. While cleaning the shrimp, set the pot to boil for the spaghetti and cook as directed. Peel and de-vein the shrimp, blot dry on several layers of paper towel and place in small/medium bowl. Sprinkle evenly with half of the salt and all of the sugar. Stir to coat.
2. Finish cooking spaghetti and drain. Return to cooking pot and add the olive oil. Stir to coat.
3. Meanwhile, set a large, non-stick frying pan over medium/medium high heat. Spray quickly with cooking spray and when the pan is hot enough add the broccoli slaw. Sprinkle with 2nd half of the salt and cook, stirring constantly for 5-7 minutes. Crush or press 6 cloves of garlic into pan and cook until fragrant, 30 seconds or so. Add the shrimp and continue stirring constantly until shrimp are pink, but not over done, approximately 3-4 minutes. The shrimp should be almost fully pink. They will continue to cook after being removed from the frying pan.
4. Stir shrimp/garlic/broccoli mixture into spaghetti pot and serve.
Makes 4 servings, approximately 2 cups each.
