Ingredients

1 avocado (halved & sprinked with lime juice)
4 TBSP Fat-free I Can't Believe It's Not Butter
1/2 small onion (finely chopped)
1 TBSP flour
1.5 C skim milk (scalded)
1/2 pound lump crabmeat
1/2 tsp mustard
1 clove garlic (minced)
2 TBSP parmesan cheese (grated)
Salt and pepper to taste
Directions
Preheat oven to 400 degrees F.
Half avocado and remove pit. Sprinkle each half with lime juice and set aside.
Saute onion in butter, but do not allow to brown at all.
Make roux by adding the flour and cook for 2 minutes.
Add milk, a small amount at a time, guarding against lumping.
Cook and stir until smooth and thick.
Add minced garlic and continue to stir 1 minute (add last to prevent it from turning bitter).
Remove from heat.
Combine remaining ingredients and add to white sauce.
Fill avocado cavities with mixtue.
Sprinke each half with 1 TBSP parmesan cheese.
Bake for 15 minutes or until avocado is heated through.
