    2 cups arugula
    1 tsp olive oil (infused is better, I use basil)
    2-3 tblsp balsamic vinegar (18 year)
    3 thin slices of red onion
    1 cup halved cherry tomatoes
    dried garlic and black pepper to season

Directions
