Ingredients

2/3 cup raw oat bran
3 cups water
10-20 drops flavored stevia
1/2 tsp cinnamon
2 tsp chia seeds
1 scoop protein powder--I used About Time to calculate this time
1/2 cup liquid egg whites (or 2 egg whites)
Directions
In a medium to large saucepan boil 3 cups water with a pinch of salt. Once water is boiling reduce heat slightly and add oat bran. Whisk away lumps and add stevia drops. Let cook at rolling boil for about 1 minute. Add cinnamon and chia and whisk until fully incorporated. Wait another minute and mix in protein powder (you can add a bit of additional hot water to help the whey fully dissolve). Finally add egg white(s) and whisk, whisk, whisk for a few more minutes until oat bran is thickened and looks creamy. It's important that you use pasteurized egg whites or powdered in case they do not get fully cooked here. Reduce heat to low for an additional minute or so to try to finish cooking the egg.
Transfer to a non-BPA bowl/cup/jar and let sit overnight to thicken up nicely :)
