Introduction
Veggie burgers using black beans and rice. Veggie burgers using black beans and rice.Number of Servings: 7
Ingredients
-
1 cup (uncooked) long grain brown rice
1 1/2 cup black beans
1 egg
1/4 cup shredded carrots
1/2 cup bread crumbs
1 Tbsp Worchester
1 Tbsp Steak sauce (like A1)
Seasonings to taste
Tips
I use salt-free burger seasoning to keep the sodium level down.
Directions
Start cooking the rice. (I put 1 cup of dry rice and 2 cups of water into a saucepan. Bring it to a boil. As soon as it boils, I drop the heat to low and cover tightly for 25-30 minutes or until the water is all absorbed.)
While the rice is cooking, work the rest up...
Mash the beans with a fork.
Mix seasonings, worchester, steak sauce, and eggs into the beans.
Fold the finished rice into the bean mixture.
Add the bread crumbs in to the mixture to thicken it up.
Heat up a frying pan on low heat (I use 3 on my stove top) with some olive oil.
Measure 1/2 cup of the mixture and drop into the pan. The mixture will be pretty sticky, but you can shape into nice round patties with a spatula.
Fry to brown and crisp.
Eat!
Serving Size: Makes 7-8 burger patties
