Introduction

Ingredients

Dates, 0.5 cup, pitted, chopped
Bicarbonate of Soda, 0.5 tspn
Water, tap, 0.5 cup (8 fl oz)
Low fat yogurt, 0.25 cup
Granulated Sugar, 0.25 cup
Egg, fresh, 1 extra large, beaten
Whole Wheat Flour, 1 cup
Baking Powder, 0.5 tsp
Salt, 0.5 tsp
Walnuts, 0.5 cup, chopped
Sauce:
Becel light margerine, 4 tsp
Water, tap, 0.5 cup (8 fl oz)
Vanilla Extract, 0.5 tsp
Granulated Sugar, 5 tsp
Cinnamon, 2ml
Alcohol, brandy, 3 tablespoons
Tips
The muffins can be frozen and used when needed.
Directions
1. Soak the dates in the boiled water. Add the bicarb of soda, stir and leave to cool.
2. Cream the yogurt and sugar. Add the eggs and mix well.
3. Mix the flour, baking powder, salt and walnuts.
4. Add the date and water mix and stir well.
5. Divide into 12 equal portions and pour it into a muffin pan.
6. Bake in a pre-heated oven at 180 degrees celcius for 20 to 30 minutes till cooked through.
7. Remove from oven and pour a tablespoon of the warm souce over each muffin.
8. Serve cool with whipped cream or low fat ice cream

3. Add the brandy and keep warm
