Ingredients

10 oz can pumpkin
2 1/2 c sugar
2/3 c olive oil
1/4 c soy milk, unsweetened
4 cage free brown eggs
2 1/2 tsp vanilla extract
2 tsp grated organic orange peel (must be organic so you are not eating pesticide flavored peel).
1 1/2 cups unbleached white flour
1 1/2 cups whole wheat flour
1/2 tsp baking powder
2 tsp baking soda
1/2 tsp salt
1 c cranberries, chopped
1/2 cup walnuts, chopped
1/2 c raisins
Directions
350 degree oven.
Beat first seven ingredients in a bowl.
Mix flour, baking soda, baking powder, salt in a small bowl.
Mix dry ingredients into wet ingredients.
Fold in cranberries, raisins, and nuts.
Pour into prepared loaf pan and bake for 60 mins.
OR
Pour into prepared muffin pan until 1/2 to 2/3 way up the section. Cook 15-30 minutes.
