Introduction
This is my new, quick, go-to favorite! Made it after church one night when there was no time for rice or pasta. A great way to fill up without those added carbs! Ingredients

2T olive oil
1-2 medium shallots
2-3 garlic cloves
1 medium zuchinni, chopped
1/4 cup celery, chopped
1 cup mushrooms, chopped
1/8 cup chopped spanish peanuts
2T Teriyaki baste & glaze
2T sesame seeds
1 cup cooked, shredded chicken breast
Tips
This can be served over rice, orzo, or tossed with other pastas. Try adding other veggies, such as grated carrots, green peas, or broccoli.
Directions
Heat olive oil in heavy skillet. Add zuchinni & stir to coat with oil; cook about 5 minutes, uncovered. Stir if needed. Add onions, shallots, celery, mushrooms, peanuts, and teriyaki. Stir well and cook about 8 minutes. Fold in shredded chicken & sesame seeds, and continue cooking until zucchini is tender but not soggy. Serve immediately.
