Number of Servings: 4

Ingredients

2 Granny Smith apples, peeled, cored, and diced fine
    1 red onion, diced fine
1 Anaheim pepper, seeded and membrane removed, diced very fine
    3 ounces cilantro, minced
    3 ounces honey
    1 lemon
    1 lime

Tips

Mine's made with Anaheim chili pepper, but poblano works equally well, and jalapeno if you want a stronger bite. If you want a little smokiness to the flavor, roast your pepper first.

Directions

Juice the lemon and the lime (and if you're feeling adventurous, zest the lime as well), putting juice (and zest) in a bowl. To this, add the honey and thoroughly combine.

Dice the apple and add it to the juice while doing so so that it doesn't brown. Add all other ingredients to the bowl and stir to combine. Let sit in fridge for at least 30 minutes for flavors to meld together, then serve!

Serving Size: Makes 4 large servings (for salad topping), or a good dip!
