Introduction

Ingredients

    2 Large Eggs
    1/2 cups fresh Spinach
    2 fresh medium Mushrooms, sliced
    1/4 cup chopped Onions
    1 Tbsp chopped Scallions or Green Onions
    1/4 cup chopped Green Bell Peppers
    1/4 cup shredded Cheese (Cheddar)
    A splash of 2% Milk
    1 Tbsp Olive Oil

Tips

You can use different cheeses, I just needed to finish off my shredded cheddar.


Directions

Chop onions, scallions, and bell peppers. Slice mushrooms. Break spinach by hand. Mix eggs and milk thoroughly with salt, pepper and garlic powder to taste. Heat olive oil in skillet, saute veggies until spinach is wilted and mushrooms are semi-soft, then set aside. Let egg mixture cook in skillet flat until set and add veggie mix with cheese on one half of egg mix. Carefully flip free half onto the veggie half and heat through.

Serving Size: Makes 1 Omelette
