Ingredients

    2 tbsp extra virgin olive oil
    1 1/2 lbs Chicken Breast, cubed
    1 medium onion, chopped
    1 bell pepper, coarsely chopped
    1/4 cup minced garlic
    1 can water chestnuts
    1 can (16-20 oz) pineapple chunks or crushed
    1 can (6oz) mandarin oranges in juice (not syrup)
    1 packet hot and spicy seasoning mix
    1 tbsp sugar
    1 tbsp soy sauce
    2 cups brown rice, dry
    1 3/4 cups water
    2 tbsp whole wheat white flour (if needed)


Tips

This is how I made my first attempt at this recipe. If you like your food very spicy, I'd add some hot peppers.

I mixed the oranges in with the sauce and they fell right apart. I recommend using them more as a garnish.


Directions

Prepare brown rice per package instructions.

Heat oil in a large pan or wok over medium high heat. Add onion, green pepper, and garlic. Cook for a couple minutes, until onions are translucent. Add chicken and cook until no longer pink.

Meanwhile, mix seasoning mix, sugar, soy sauce, and pineapple (do not drain).

Reduce heat. Add water chestnuts and sauce mix. Stir in until heated through. Add flour to thicken sauce if needed. Top each serving with oranges.

1 serving is 2/3 cup rice & 1/6 of chicken stir fry.
