Introduction

Ingredients

    4 oz. lean ground beef, browned
    1/2c. Onions
    Pumpkin flesh - 2 cups
    1/2 granny smith apple! Chopped
    1/2 c. Unsweetened apple juice (or white wine but adjust nutrition info)
    1 c. Cooked brown rice
    1/4 c.dried cranberries
    1 T. Olive oil
    1 t. Ground thyme
    1 t. Fresh oregano,or .25 t. Dried
    Salt & pepper to taste

Tips

If use very small pumpkins is a very elegant dinner with salad and rolls.


Directions

Brown meat, remove from skillet! Increase heat to med. and add onion and 2 c.pumpkin meat. Cook until pumpkin softens, about 5-7 min. Add apple and meat,cook 5 min. Add juice or wine, cook for 2 min. Combine rice and remaining ingredients, add to meat mix. Place in hollowed out pumpkin. Cover w/foil & bake @ 350 degrees for 25 min. Remove foil and cook 10 min. longer.

Serving Size: Two main dish servings, or 4 side dish servings
