avocado and prawn curry
200g cooked prawns
tbs vegetable oil
3/4 can chopped tomatoes
tbs tomato paste
The heat of the curry can be controlled by the use of different strength curry powder and the length of time it is cooked before adding the prawns and tomatoes.
Serve with rice and or nan bread, another veg curry goes well too
mix together until soft, add prawns and make sure the mixture coats everything.
Add other ingredients and simmer for 5 minutes to reduce the liquid
remove bay leaves before serving
Serving Size: makes 2 hearty portions, could stretch to 4 with other dishes added to the meal
