Ingredients

    Green lentils
    1 onion
    3 cloves garlic
    2 cloves
    3 carrots
    .8lbs guanciale
    2 tbsp olive oil

Directions

Saute guanciale in olive oil. Slice carrots, chop onion, mince garlic and saute in olive oil. Add lentils and add 4 cups water. Cook covered until water is absorbed about 30 minutes.
