Ingredients

    3 large eggs
    3/4 cup applesauce
    2 Tbsp oil
    1.5 cup splenda
    3 cup grated zucchini
    3 tsp vanilla
    1 tsp baking soda
    1 tsp salt
    1/2 tsp baking powder
    1 tsp cinnamon
    1/2 cup walnuts

Tips

substitute applesauce for oil, splenda for sugar and 1.5 cups white flour and 1.5 cups wheat flour for a healthier alternative.


Directions

Grated zucchini in large bowl, add all wet ingredients and mix until well blended, sift dry ingredients and combine with the creamed mixture until smooth. Pour into greased loaf pans and bake at 325 for 1 hour or until done
