Ingredients

2 ripe bananas
1 Cup oat flour
2 scoops of vanilla protein powder
1 Cup nonfat Greek yogurt
3 egg whites
1/4 Cup unsweetened applesauce
6-8 packets of Splenda (or equivalent)
2 tsp vanilla extract
1 tsp baking soda
Pinch of salt
1/2 Cup chopped walnuts (optional)
Tips
I usually let the bread sit in the glass baking dish for a bit to start to cool and then I turn it out onto a cooling rack. Store in the refrigerator in sandwich ziploc bags.
Directions
*Preheat oven to 375 degrees.
*Mash bananas in mixing bowl to a pudding-like textures.
*Add all remaining ingredients (except nuts) and mix well.
*Carefully fold nuts into batter.
*Prepare 8 x 8 inch baking dish with nonstick spray.
*Place batter in dish evenly and bak 30-40 minutes or until center is completely cooked.
*Cut into 12 squares when cooled.
Serving Size: Makes 12 squares, 3 squares per serving
