Ingredients

    5 cups cooked white rice
    1 chicken breast, diced small
    2 zucchini, julienned
    2 carrots, julienned
    1 cup green beans
    soy sauce
    salt and pepper to taste

Tips

I make a lot of this because the leftovers are even better. Feel free to add broccoli, mushrooms, etc.
I know this isn't traditional stir fried rice, but it's easy to put together with ingredients i always have on hand.


Directions

Place canola oil in wok shaped pan. Add chicken and cook until no longer pink. season chicken with salt and pepper. Drain out juice if desired. Add vegetable and cover. Cook until almost tender, about 6-7 minutes.
Add rice, cold rice works better, and mix together. Add soy sauce and more pepper to taste. stir and cover. Cook until warmed through, about 5 minutes. Serve.

Serving Size: Makes about 6 1 1/2 cup servings
