Ingredients

    3/4c Liquid Egg White
    1 whole large egg
    1/3c mushrooms, chopped
    1/3c zucchini, chopped
    1/3c onions, chopped
    1/2 Smart Sausage (chorizo style), diced
    Salt and pepper to taste
    1/4c shredded cheddar cheese

Tips

Substitute according to season or taste. Chorizo style Smart Sausage may be substituted for Italian Style if desired.


Directions

Preheat oven to 350. Set cheese aside and mix all ingredients in a small casserole dish. Sprinkle cheese on top. Bake for 45 min or until egg sets. Allow to rest for 5 minutes. Slice in half and serve.
